Lucky Dumplings with Chili Nut Crunch Dipping Sauce

During Chinese New Year, our family tradition of making dumplings takes center stage. It’s an act filled with love and symbolizes good fortune. A hidden coin in one of the dumplings brings a touch of excitement, promising luck to the finder. Just watch out for your teeth!

Lucky Dumplings Recipe

 

Ingredients (for 40-50 Dumplings)

 

  • 500 g or 1 lb ground pork
  • 1 cup cabbage, shredded, salted and squeezed of excess liquid
  • 1 carrot, shredded, salted, and squeezed of excess liquid
  • 1/2 cup wood ear mushrooms, rehydrated and cut into strips
  • 3 scallions, sliced
  • 3 garlic, minced
  • 2  tablespoons soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1 teaspoon sesame oil
  • 40-50 Dumpling wrappers
  • Vegetable Oil, as needed
  • Water, as needed

Instructions

  1. Prepare the Filling: In a large bowl, combine ground pork, cabbage, carrot, wood ear mushrooms, and scallions. Add soy sauce, salt, white pepper, and sesame oil. Mix thoroughly until all ingredients are well combined.
  2. Assemble the Dumplings: Place a dumpling wrapper on a flat surface. Add a teaspoon of filling to the center. Wet the edges with water, fold the wrapper in half, and press to seal the edges. You can pleat the edges for a decorative touch.
  3. Choose Your Cooking Method:
    1. Frying (Potsticker style): Heat 1 TBSP of oil and 1/2 cup of water in a non-stick pan over medium heat. Place dumplings in the pan, flat side down. Cover and steam for 5 minutes, then uncover until the water has evaporated and the dumplings are crispy.
    2. Boiling: Bring a pot of water to a boil. Add dumplings and cook until they float to the top. Let them cook for an additional 2-3 minutes.
    3. Steaming:Place dumplings in a steamer basket lined with parchment paper. Steam for 10-12 minutes until fully cooked.

 

Chili Nut Crunch Dipping Sauce

Ingredients

  • 2 fresh Thai chilies, minced
  • 3 garlic cloves, minced
  • 2 scallions, finely chopped
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons chili nut crunch

Instructions

  1. Combine Thai chilies, garlic, and scallions in a small bowl.
  2. Add rice vinegar, soy sauce, and chili nut crunch.
  3. Mix well and serve alongside your dumplings.
